Potato Soup

2 Cups boiling water
one-half cup diced carrots
2 cups diced potatoes
one-half cup diced celery
one-quarter cup chopped onions
1 teaspoon salt
one-quarter teaspoon black pepper
one-quarter cup butter
one-quarter cup flour
2 cups of milk
4 ounces shredded Cheddar Cheese
1 cup cubed cooked ham

Add boiling water to potatoes, carrots, celery, onion, salt and pepper. Cover and simmer 10 minutes. DO NOT DRAIN.

Make a sauce of the butter, flour and milk over medium heat. Remove from the heat and stir in cheese until melted. Add ham, and mix with undrained vegetables. Heat through, but do not boil.
