Peanut Butter Brittle Bars (say that 5 times real fast)(Revised Version) Crust:3/4 cups corn starch 1/2 cup flour 1/3 cup powdered sugar 1/2 cup butter, cut into pieces 1/4 tsp salt cooking spray Filling: 2 eggs 3/4 cup light or dark corn syrup 3/4 cup peanut butter, creamy or chunky 2 tblsp butter, melted 1 tsp vanilla 3/4 cup dry roasted peanuts (optional) 3/4 cups sugar Preparing the crust: In a large bowl with mixer on medium speed, beat corn starch, flour, powdered sugar, butter and salt until mixture resembles course crumbs. Press firmly into bottom and 1/4 inches up sides of a 13X9X2 pan that has been sprayed with cooking spray. Bake in a 350 degree oven for 15 minutes or until golden brown. Preparing the filling: In a large bowl combine eggs, corn syrup, sugar, peanut butter, butter and vanilla until well blended. Stir in peanuts. Pour over hot crust. Bake in a 350 degree oven for 20 minutes or until filling is firm around edges and slightly firm in the center. Cool. Cut into bars, 2"X1 1/2". Makes approximately 36 bars.
