Creamed Squirrel
3 squirrels--cleaned and cut into serving size pieces 2 medium onions--sliced 2 tbs butter or margarine 2 cups water 2 - 3 chicken boullion cubes 1/2 pint whipping cream Directions: In a 4 quart saucepot, over medium heat, saute onions until translucent. Add squirrel pieces, water and 2 chicken boullion cubes. Cover and simmer 2 - 2 1/2 hours or until very tender, adding more water if necessary. (Time varies with age of the squirrel). Then add the whipping cream and simmer 15 minutes longer. If desired, add the third chicken boullion cube and onion powder and salt to taste. Thicken mixture as it simmers with a small amount of flour blended with about 1/4 cup of cold water. Serve over mashed potatoes, biscuits, or bread. Chicken or partridge also work well in place of the squirrel. The writer of this recipe says that she made this dish for the young ones and they could not tell if they were eating squirrel or chicken.
