Southern Squirrel Casserole
2 squirrels--cleaned and cut into serving size pieces seasoned flour 1/4 cup rice 1 green pepper, minced 1 small onion, minced 1/2 cup chopped celery 1 cup diced tart apple Directions: Roll the pieces of meat in the seasoned flour and put into a well greased shallow casserole dish. Sprinkle on the rice, green pepper, onion, celery, and apple. Barely cover with boiling water. Cover the dish tightly with a double thickness of foil and bake at 300 degrees for about one hour, or until tender. Serves 4 YUM, YUM...Tasty treat (if you like bird feeder robbin' critters!!)...Enjoy
